Jacinda was the flight attendant Castle met on his flight back from Vegas and casually was seeing him in The Limey.
Castle first met Jacinda while trying to forget Beckett's betrayal of remember he saying "I Love You" to her, so while on way coming back from Vegas he met Jacinda as she was his flight attendant on the way back to New York City. She came along with Castle in his red ferrari to crime scene and left in his ferrari.
Later on Jacinda had a lunch date with Castle where they had lobster which Castle describes as "succulent lobsters – from Maine – paired with an earthy yet elegant Pinot Noir from Sonoma Valley".
